Claretum - Medieval wine flavored with spices

Claretum, known throughout medieval Europe, is an ancient sweetened and strongly spiced white wine drink. Claretum was prepared on great festive occasions.
Characteristics of medieval wine
White wine, Muller Thurgau D.O.C. Sweet Aosta Valley, flavored with spices, with a crystalline appearance and a golden yellow color. The nose is very intense and persistent with hints of orange and apricot jam. The taste is sweet, fresh and soft, the taste is enveloping and very persistent. Alcoholic content: 16% vol

The historical source of Claretum

The passion for the culinary art and for history led Le Speziale to research and find in ancient original documents of the fifteenth century, the recipe of Claretum spiced medieval wine and recreate it to relive the history of that period through the taste. In fact Claretum is mentioned in a historical document from the end of the 15th century belonging to the Challant family, a powerful noble family from the Aosta Valley, who ruled much of the Aosta Valley on behalf of the Savoy during the Middle Ages and the Renaissance. In the document, dating back to the time of Giorgio di Challant, the Claretum was prepared for regular Canons of the Collegiate Church of Sant'Orso in Aosta when he was commendatory prior.

How to taste Claretum
In the Middle Ages it was served at the beginning and end of a meal.
Even today Claretum, served chilled with a little ice, is excellent as an aperitif, but it can also be tasted as a dessert or meditation wine to accompany blue cheeses such as gorgonzola, Bleu d'Aoste, Plaisentif, Fontina, Lardo di Arnad DOP, Mocetta, but also dark chocolate, sweets made with chestnut flour, Piata or Micòoula (a sort of Aosta Valley pandolce made with wholemeal bread, butter, apples, walnuts and raisins ...).
It can also be an original ingredient for many cocktails and many chefs have started using Claretum in their cooking recipes.
